ライブラリの設定
PATH に DLL のあるディレクトリを追加します。
あるいは、DLL をプロジェクト配下にコピーします。

Build Settings > All > Search Paths > Header Search Paths > /usr/local/opt/opencv/include/opencv4, non-recursive
Build Phases > Link Binary With Libraries
/usr/local/opt/opencv/lib/libopencv_core.dylib, /usr/local/opt/opencv/lib/libopencv_imgcodecs.dylib, … をドロップ
